My mother brought these as an appetizer for Thanksgiving and they were amazing.
1 pound ground turkey or pork
3/4 Tbsp paprika
1/2 Tbsp fennel seeds
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp rosemary
1/3 cup garbanzo or garfava flour *
1/3 cup brown rice flour *
1/3 cup tapioca starch *
1/2 tsp xantham gum *
1/2 tsp salt *
1 1/2 tsp baking powder *
1 cup shredded cheese, such as Parmesan, Pecorino Romano, or cheddar
1/4 cup water
1 egg or two egg whites
1 1/2 Tbsp. fresh, chopped parsley
* = Can replace with 1 cup Bob’s Red Mill All Purpose Baking Mix
Mix ground turkey with spices. (You can do this the night before and let sit in the refrigerator). Mix flours, xantham gum, salt, and baking powder together.
Heat oven to 350 degrees. Lightly grease jelly roll pan or line with foil. Mix egg and water together with a fork or whisk, then add the rest of the ingredients in a large bowl and mix by hand.
Form into one-inch balls. Bake 20-25 minutes or until brown. Serve warm or at room temperature.
