It’s been awhile since I posted. We went away to Iceland to visit family and got stuck for an extra week due to the volcano. It was nice to have a longer visit, but stressful not knowing when we were leaving. (Also, it’s hard staying in a non-babyproofed house with a 14 month old). We are eating a lot of veggies this week to make up for not cooking our normal meals.
Saturday – Rice pudding and lifrarpylsa (Icelandic liver sausage)
Sunday – Stir fried tempeh and veggies, rice
Monday – Hamburgers, sweet potato fries, salad
Tuesday – Fiskbúðingur (Icelandic fish pudding), potatoes, salad
Thursday – Asparagus Crepes with Cucumber Avocado Sauce
Friday – Chili
Saturday – Family party
