It’s been a while since I posted…. new baby will do that. Our diet has expanded a bit now that I am no longer pregnant, since right now the only restriction I have is dairy, but I will continue to post recipes for people on restricted diets.
Monday – “Train Wreck” (pasta with ground beef, spices, tomatoes, and ketchup)
Tuesday – We were gifted with a meal from friends, which turned out to be venision meatballs with sauce, spaghetti, and salad
Wednesday – Chicken with Peaches and Snow Peas from the freezer
Thursday – Caribbean Black Beans, Golden Spanish Rice, Tropical Fruit Salad (all from Moosewood Restaurant Cooks at Home: Fast and Easy Recipes for Any Day)
Friday – Curried Vegetables with Dahl and Coconut Basmati Rice (both also from the above cookbook)
Saturday – Baked ham, salad, mashed potatoes, corn, and Sweet Potato Corn Muffins from Feeding the Whole Family: Cooking with Whole Foods
Sunday – Hamburgers on toasted onion rolls, sweet potato fries, salad
