Menu Plan Monday – Week Of 4/25/2008

We did our weekly shopping, and it was under $30. (Doesn’t count next weekend’s meals, but those use up things from the freezer and won’t need much more in the way of purchases). We are using leftovers and things from the freezer and pantry.

Monday – Leftover Crockpot Taco Soup and Corn/Sweet Potato Muffins from freezer

Tuesday – White Chili with leftover turkey from my favorite crockpot cookbook (I have a doctor’s appointment in the late afternoon, so it will be nice for dinner to be ready for us)

Wednesday – We are getting a new (to us, 10 year old) car, and we have to sign paperwork, and then I have a meeting. So it will be turkey sandwiches with leftover turkey, and chips my in-laws bought and left behind (we don’t usually buy chips).

Thursday – Ham, Pineapple and Pepper Casserole from my casserole cookbook (more car stuff so I can make this ahead and we can heat it up when we get home)

Friday – Pizza (type to be determined)

Saturday – Sole with Lemon Hazelnut Sauce (from the casserole cookbook), either spinach or asparagus on the side, depending on what’s on sale

Sunday – Hamburgers, probably with baked sweet potato fries

The order of these meals may rearrange depending on mood. We are trying to use up some things from the freezer.

Monday – Lamb Sausage, sauteed spinach, rice

Tuesday – Crockpot Taco Soup

Wednesday – Ginger Sweet Potato Chicken Bake

Thursday – Bok Choy Yakisoba, Sweet Potato Tempura (both from Feeding the Whole Family: Cooking with Whole Foods)

Friday – Ham & Pineapple Casserole (from The Big Book of Casseroles: 250 Recipes for Serious Comfort Food)

Saturday – Roast Turkey (free gift from supermarket promotion)

Sunday – Ham & Chicken Casserole (from The Big Book of Casseroles: 250 Recipes for Serious Comfort Food)

Meals (Unplanned) Week Of 4/13/2009

We had a busy weekend with the christening party and company, so we didn’t do a real shopping trip or plan meals. We decided to try to make it through the week without shopping (like the Money Saving Mom Pantry Challenge, and succeeded:

Monday – leftovers (from party and Thai chicken)
Tuesday – leftovers (there were a lot!)
Wednesday – Spinach, ham, pepper, feta frittata and brown rice
Thursday – Palak Paneer (Indian spinach/fresh cheese dish) and brown rice from Wednesday
Friday – Meatball subs (Meatballs & rolls from freezer, sauce from tomatoes in pantry)
Saturday – Fried egg in bread
Sunday we went shopping and made Asparagus Brie Quesadillas for a quick supper

We have company this week for the baby’s christening, so there are a lot of “company-friendly” meals.

Monday: Spinach & Feta Quiche, Mustard Green Salad

Tuesday: Cajun Skillet Beans, Spicy Kale, Corn Scones

Wednesday: Kielbasa, Mashed Potatoes, Salad

Thursday: Spinach & Feta Meatballs, Rice, Sauteed Spinach

Friday: Thai Chicken, Rice

Saturday: Barbeque (probably lamb, we will pick something up when we are shopping for food for the christening party)

Sunday: Christening Party (we probably will skip dinner but if we don’t have leftovers then we will make hot dogs)
