This recipe comes from Claire’s Corner Copia Cookbook: 225 Homestyle Vegetarian Recipes from Claire’s Family to Yours. We started making it when I couldn’t have vinegar, but it is better and cheaper than store-bought salsa.

1/4 cup olive oil
1 onion, chopped
6 cloves garlic, crushed
2 tsp chili powder
1/4 tsp crushed red pepper
4 oz can chopped green chiles
28 oz can diced tomatoes
1/2 cup chopped fresh cilantro

Heat oil over low heat and add onions and garlic. Cook for 15 minutes, stirring occasionally, until soft. Add remaining ingredients, plus salt and pepper to taste. Simmer for 30 minutes.

Makes about 1 quart.

Crockpot Chicken Mole

2 Tbsp olive oil
1 chopped onion
2 cloves minced/crushed garlic
1/4 cup chile powder
2 Tbsp brown sugar or blackstrap molasses or honey
3/4 tsp honey
1/2 tsp ancho chile powder or 1/4 tsp cayenne
15.5 oz can diced tomatoes
3 Tbsp cocoa powder
3 Tbsp peanut butter
1 cup water

Saute onion in olive oil. Add other ingredients and pour over chicken in crockpot. Cook for 8 hours. Serve with rice or tortillas.

This week, chicken and sausage were on sale, so we stocked up on chicken and I made a few meals for the freezer. It means that hopefully we’ll have a few cheap weeks of meals.

Menu Plan Monday – Week of 5/04/09

This week’s meals are mostly from the freezer; we bought the broccoli, noodles, and chicken on sale last week. The only thing from this week’s meal plan that we bought this weekend were tomato sauce for the curry, green beans, and salad. We still spent a lot of money, because we were hosting coffee hour at church (which turns into a big deal at our church) and were stocking up on pet food and other things.

Monday – Leftover ham from freezer, brown rice, green beans, salad

Tuesday – Crockpot Taco Chicken

Wednesday – Vegetarian Curry with chick peas

Thursday – Asian Broccoli Noodles from cookbook sold as fundraiser by Kentuckiana Childrens Center

Friday – Hamburgers
