Soaked Carob Buckwheat Pancakes

I can’t even imagine buying pancake mix. These are great because you can do most of the work the night before, mix in a few last minute things, and start making pancakes.

2 cups kefir
1 cup buckwheat flour
2 1/2 Tbsp tapioca or arrowroot starch
1/2 cup carob
2 eggs
1/2 cup chopped crispy walnuts
1 1/2 tsp baking soda
1/2 tsp salt

The night before, mix buckwheat, starch, carob, and kefir. Cover and soak overnight. You can chop the walnuts now to save time in the morning.

In the morning, beat in the eggs and then stir in the walnuts, baking soda, and salt. Heat griddle or frying pan and cook like regular pancakes.
