My son turns one on Sunday, so we are having a “cake party” in the afternoon, with a few cakes (allergy/baby-friendly, and company-friendly), as well as a “bread cake.”
(You can see a sample picture here). Ours will be with ham, egg, and asparagus. Basically, imagine your standard tuna/egg/shrimp salad filling. It gets spread on layers of bread (usually special bread sliced horizontally, but you can lay out pieces of regular bread) and then covered with some kind of topping so it looks pretty. Other than that, weekend meals will be from the freezer; I might just make that turkey on Saturday.
Monday – Shrimp & Sausage Gumbo (we were going to have this on Mardi Gras, but we will be going to Boston that day and won’t be home in time to cook it; so we’ll just call it celebration for the Saints winning the Superbowl. ;))
Wednesday – Chicken Curry, rice, broccoli
Thursday – Train Wreck (pasta with ground beef, ketchup, and tomatoes)
Friday – Mexican Pizza with leftover chicken and pinto beans
