Menu Plan Monday – Week of 8/2/2010

It’s been a while since I posted. My husband is working on his thesis, so he has been having less time to help out around the house, and my work has been hectic. I’m going to try to get back to blogging more frequently, since I have been coming up with some great recipes.

This is my meal plan as of yesterday, but we ended up with a lot of leftover chicken, so something is going to change out, but I haven’t decided what yet.

Monday – “Train Wreck” (spaghetti with tomatoes, mushrooms, ground beef, and ketchup)

Tuesday – Kielbasa, mashed potatoes, broccoli

Wednesday – Peanut Butter Chicken

Thursday – Out to Boston to meet up with friends

Friday – Five Spice Tempeh and Vegetables with Noodles (hopefully I can find GF egg noodles for this)

Saturday – Pork chops on the grill, sides TBD

Sunday – Roast turkey

Menu Plan Monday – Week of 5/3/2010

It’s been awhile since I posted. We went away to Iceland to visit family and got stuck for an extra week due to the volcano. It was nice to have a longer visit, but stressful not knowing when we were leaving. (Also, it’s hard staying in a non-babyproofed house with a 14 month old). We are eating a lot of veggies this week to make up for not cooking our normal meals.

Saturday – Rice pudding and lifrarpylsa (Icelandic liver sausage)

Sunday – Stir fried tempeh and veggies, rice

Monday – Hamburgers, sweet potato fries, salad

Tuesday – Fiskbúðingur (Icelandic fish pudding), potatoes, salad

Wednesday – Spinach Enchiladas, Mexican Rice

Thursday – Asparagus Crepes with Cucumber Avocado Sauce

Friday – Chili

Saturday – Family party

We didn’t end up having the pork tenderloin this weekend because I didn’t marinate it in time, so we had Mandarin Orange Chicken instead (I used 1 1/4 cup fresh mandarin oranges instead of canned, since we had them to use up).

Things have been really hectic around here, so I haven’t had time to post. This weekend we tried Orange Marmalade Chicken, which was a great make-ahead meal and definitely will make rounds when it is grilling season.

Tuesday – Asparagus Brie Quesadillas with goat brie, mine with soaked spelt tortillas

Wednesday – Korean food (Bibimbap, cross between this and this recipe, spelt version of scallion pancakes, kimchi)

Thursday – Soup supper at church

Friday – Salmon (method of cooking to be determined)

Thursday – Icelandic Meatballs and Cabbage

Friday – Salmon, Pommes Anna, roasted beets

Saturday – Turkey Pot Pie

The freezer is defrosting, so we are ready for some freezer cooking or bulk meat buying. I am also freezing a lot of leftover turkey to be turned into various meals.

Monday – Pork roast, sweet potato and squash fries, broccoli, salad

Tuesday – Out (trip to Boston)

Wednesday – Yellow split pea soup (Traditionally served om Tuesday before Lent in Iceland, but we won’t be home)

Thursday – Goat Cheese and Spinach Enchiladas

Friday – Church Supper

My son turns one on Sunday, so we are having a “cake party” in the afternoon, with a few cakes (allergy/baby-friendly, and company-friendly), as well as a “bread cake.”

Well, we got through January using mostly food that we already have, and still have some left (especially that turkey). I did a little stock-up shopping, but we still came in under our budgeted amount, so I have meals for the next two weeks, mostly. I may need to buy some more items for next week.

Monday – Icelandic meatballs & cabbage, Caesar salad

Tuesday – Lamb kofta, spinach, rice

Wednesday – Whiting, either cooked with walnuts and cilantro or Mexican style; have not decided

Thursday – Crockpot Chicken Makhani

Friday – Salmon

Saturday – Leftover Icelandic lamb soup from the freezer
